Distillation and Production process:
After the excellent selection of the raw material of the local, fragrant grape “Moschato Tyrnavos”, the alcoholic fermentation begins, which is a prerequisite in order to proceed to the grape marc distillation. The distillation takes place inside inox tanks, of non-constant function, under optimal and controlled temperature conditions. It is performed on handmade copper stills in mildly stable temperature and is carried out by separating the distillate in three stages: Heads – Heart – Tails. The heart, containing the desired ingredients, is then distilled for a second time. After the heads and tails are removed, a third distillation of the heart takes place, which is the basis of the production of this unique distillate. After three distillations, the heart is diluted with reverse osmosis water and is stored in stainless steel tanks for at least 6 months until it is balanced and homogenized, at the time of bottling.
